Here is the thing about ricotta in meatballs. It sounds unusual. Most people have never tried it. But the ricotta melts into the meat mixture as it cooks and creates pockets of creaminess throughout every single meatball. It is the difference between a good meatball and one that makes people ask you for the recipe before they have even finished eating.
I was actually planning to make turkey meatballs and then I remembered beef exists. Best decision I made all week.

Ingredients
For the sauce:
1 jar marinara sauce
2 tbsp olive oil
3 cloves garlic, minced
Pinch of red pepper flakes
To serve:
Pasta, crusty bread, or zucchini noodles

A note on the ground beef: Use 80/20 ground beef. The fat content is what gives you a juicy flavorful meatball. Lean ground beef will give you a drier result and you will lose the whole point of this recipe.
A note on the ricotta: Whole milk ricotta only. It blends into the meat mixture and creates that melt-in-your-mouth texture that makes these meatballs so special.
A note on the Parmesan: Grate it fresh from a block. Pre-grated Parmesan has a coating that affects how it melts and incorporates into the mixture. Fresh grated makes a real difference.
How To Make Beef Ricotta Meatballs in Marinara
Step 1 — Make the meatball mixture
In a large bowl combine ground beef, ricotta, breadcrumbs, egg, minced garlic, chopped parsley, freshly grated Parmesan, and all your seasonings. Mix gently with your hands until just combined. The mixture will feel soft and almost squishy. That is exactly right. Do not overmix or you will end up with tough dense meatballs. Mix until everything just comes together and stop.


Step 2 — Form your meatballs
Roll into golf ball sized portions. You should get approximately 22 to 26 meatballs. Place them on a plate or baking sheet as you go. Wet your hands lightly between rolling to prevent sticking. Work quickly and do not compress the mixture too tightly when you roll.

Step 3 — Sear the meatballs
Heat 2 tbsp olive oil in a large deep skillet over medium-high heat. Add the meatballs in a single layer and do not touch them for a full 2 to 3 minutes. This is how you build that golden crust. Resist every urge to move them. Flip and sear the other side for another 2 to 3 minutes. They do not need to be cooked through yet. Work in batches if needed. Crowding the pan means steaming not searing.

Step 4 — Build the sauce
Remove the meatballs and set aside. In the same skillet lower the heat to medium. Add minced garlic and red pepper flakes. Cook for 30 seconds until fragrant. Pour in the entire jar of marinara and stir to combine. Scrape up every single brown bit from the bottom of the pan. Those bits are pure flavor.


Step 5 — Finish in the sauce
Nestle the seared meatballs back into the marinara. Cover with a lid and simmer on low heat for 15 to 18 minutes until the meatballs are cooked through to 165 degrees F. As they finish cooking in the sauce they absorb all that flavor and the sauce thickens beautifully around them.


Step 6 — Serve
Serve over pasta or with thick crusty bread for dipping. Finish with fresh basil and a generous shower of freshly grated Parmesan. Eat immediately.

Tips for the Best Beef Ricotta Meatballs
The mixture should feel soft and squishy. If it feels too wet add a small handful more breadcrumbs. If it feels too dry add a splash more ricotta. Trust the feel of the mixture in your hands.
Sear in batches. One single layer at a time. Every meatball needs direct contact with the hot pan to develop that crust. Crowded pan equals no crust.
Scrape the pan. Those brown bits that form during the sear are pure concentrated flavor. Every single one needs to come off the pan and go into your sauce.
Do not rush the simmer. 15 to 18 minutes on low heat is what finishes the cooking gently and lets the meatballs absorb the marinara flavor. High heat will make them tough.
Rest before serving. Let them sit in the sauce for 5 minutes off the heat before serving. The sauce thickens and the flavors come together beautifully.
Variations
Serve with zucchini noodles. For a lower-carb version spiralized zucchini works beautifully as the base. The sauce and meatballs are hearty enough to carry it.
Add spinach to the sauce. Stir two large handfuls of fresh spinach into the marinara during the last 5 minutes of simmering. It wilts down to almost nothing and adds nutrition without changing the flavor.
Make them smaller for parties. Roll into smaller 1-inch portions and reduce the simmer time to 10 to 12 minutes. Perfect for serving as an appetizer or party food.
Stuff them with mozzarella. Press a small cube of fresh mozzarella into the center of each meatball before rolling it closed. The cheese melts into the center as they cook. Absolutely incredible.
Use ground turkey instead. Ground turkey works beautifully with this recipe. Keep the ricotta because it is even more important for keeping turkey meatballs moist and juicy. How To Store and Meal Prep
Refrigerator: Store meatballs and sauce together in an airtight container for up to 4 days. They get better every day as the flavors develop.
Freezer: Let cool completely then freeze in an airtight container or freezer bag for up to 3 months. Thaw overnight in the fridge and reheat gently on the stovetop with a splash of water to loosen the sauce.
Reheat on the stovetop: Medium-low heat, covered, for 8 to 10 minutes until warmed through. Add a splash of water if the sauce has thickened too much.
Reheat in the microwave: 90 seconds covered, stirring halfway through.
Meal prep tip: Make a double batch and freeze half before adding the sauce. You will have seared meatballs ready to drop into fresh marinara on any weeknight with zero effort. One Sunday cook session, two weeks of easy dinners.

You can but I do not recommend it for this recipe. Pan searing creates a golden crust that adds flavor and texture that baking simply cannot replicate. If you must bake them use 425 degrees F for 15 to 18 minutes then transfer to the marinara to finish.
Yes. Italian seasoned breadcrumbs work great and add extra flavor. Plain breadcrumbs also work. Same amount either way.
Fresh parsley gives the best flavor and color. Dried parsley works in a pinch. Use 1 tbsp dried in place of the ¼ cup fresh.
A few possible causes. The mixture may have been too wet so add more breadcrumbs next time. You may have flipped them too soon before the crust formed so leave them untouched for the full 2 to 3 minutes. Or the mixture was overworked so mix gently and stop as soon as everything comes together.
