HOW TO MAKE LEMON HERB CHICKEN THIGHS WITH CRISPY SMASHED POTATOES:

Step 1 — Boil the potatoes

Place potatoes in a large pot of heavily salted cold water. Bring to a boil and cook until completely fork tender all the way through. This takes longer than you might expect — plan for 20 to 25 minutes depending on size. You should be able to pierce them easily with no resistance. Drain completely and let steam dry for 5 minutes. Dry potatoes get crispier potatoes.

Step 2 — Make the marinade

Combine olive oil, minced garlic, lemon zest, fresh lemon juice, dried oregano, smoked paprika, finely chopped fresh rosemary, and fresh parsley in a bowl. Stir well. This marinade smells absolutely incredible and that smell only gets better in the oven.

Step 3 — Season and coat the chicken

Season chicken thighs generously on both sides with salt, black pepper, and garlic powder. Spoon the herb marinade over both sides pressing it firmly into the skin with your hands. Make sure every inch of the skin is coated.

Step 4 — Preheat oven to 425 degrees F

Step 5 — Smash the potatoes

Place boiled potatoes on a large generously oiled sheet pan. Use the bottom of a heavy glass or a potato masher to firmly press each potato flat to about half an inch thick. Season with salt, pepper, and garlic powder. Scatter minced garlic over each potato.

Step 6 — Roast the potatoes first

Roast smashed potatoes at 425 degrees F for 25 to 30 minutes until the edges are deeply golden and crispy. Check them at 20 minutes and add more time if needed. You want real crispiness on those edges not just a light golden color.

Place marinated chicken thighs on a separate sheet pan or large oven-safe skillet skin side up. Add chicken to the oven when the potatoes have been roasting for about 20 minutes. Roast chicken for 35 to 40 minutes until the skin is deeply golden and crispy and the internal temperature reaches 165 degrees F at the thickest part near the bone. Do not rush this. Bone-in chicken thighs need the full time.

Step 8 — Finish and serve

Remove both from the oven. Immediately finish the potatoes with freshly grated Parmesan and chopped parsley while still hot. Squeeze fresh lemon juice over the chicken and finish with extra parsley. Serve together with extra lemon wedges and flaky sea salt on the table.

Boil the potatoes completely through. More done than you think necessary. Undercooked potatoes will not smash flat and will not get crispy in the oven.

Use boneless skinless chicken thighs for a faster version. Reduce oven time to 20 to 25 minutes. The skin will not be as crispy but the flavor from the marinade is still outstanding.

Add asparagus to the sheet pan in the last 12 minutes of roasting for a complete one pan meal.

HOW TO STORE AND MEAL PREP:

Reheat potatoes: In a hot skillet with a drizzle of olive oil for 3 to 4 minutes until edges crisp back up. Or in a 400 degree F oven for 8 minutes. The microwave works but you will lose the crispiness.
