I was wrong.
This is genuinely one of the most delicious chicken pasta recipes I have ever made. The sauce alone is worth making. Garlic cooked low and slow in butter until deeply golden, sun dried tomatoes, fresh herbs, heavy cream, and a mountain of freshly grated Parmesan all coming together in one pan. My family scraped the skillet clean and my kids asked when I was making it again before they even finished their plates.
The key to this recipe is searing the chicken first and letting it finish cooking in the sauce. That sear creates a golden crust on the outside that adds incredible depth to the entire dish. And finishing the chicken in the sauce means every bite is infused with that creamy garlic flavor all the way through.
I also cut back on the sun dried tomatoes from most recipes you will find online. Too many and they overpower everything else. The amount I use here is just enough to add that rich savory depth without dominating every bite.

A note on the sun dried tomatoes: Use sun dried tomatoes packed in oil not dry packed. They are more flavorful and blend into the sauce more beautifully. I use half the amount most recipes call for because I want the tomato flavor present but not dominant. You should taste the garlic, the cream, and the Parmesan first. The sun dried tomatoes are supporting flavor not the star.
A note on the garlic: Cook it low and slow for a full 90 seconds. Do not rush it. Deeply golden garlic is the foundation of this entire sauce. It should smell incredible before anything else goes in.
